Keto-Friendly Pizza Supreme Stuffed Peppers

Hey there! This fantastic recipe is not only delicious but also super easy to make. And the best part is that you can customize it to suit your taste!

First things first, I'm not too fond of the word diet. To start, it has the word die, which sounds painful.

What are the benefits of keto, and if you're unfamiliar with it, how do you start?

The ketogenic diet reduces one's total carbohydrate consumption to fewer than 50 grams daily and as low as 20 grams daily. Suggested intake is an average of 70-80% fat from total daily calories, 5-10% carbohydrates, and 10-20% protein.





Ingredients:


Meats


4-6 oz Bacon cooked and crumbled

I use 1 lb Italian sausage (half hot and half sweet or mild). You can remove it from the casings or buy pre-ground packs.

4-6 oz of sliced Pepperoni


Produce


4 Bell peppers, large

2-3 cloves Garlic

1 Onion, small yellow or white

4-6 oz of sliced white mushrooms


Condiments


1/4 cup sliced Black olives

2 cups Pizza sauce (I use Rao's pizza sauce)


Dairy


2 cups Mozzarella

grated parmesan for garnish

red pepper flakes

chopped fresh basil for garnish


Herbs and spices


1/2 tsp oregano or Italian herb blend


Recipe as follows:


  1. Preheat oven to 400F.

  2. Cook the bacon, drain, and set it aside.

  3. Cook the sausage and onion, breaking the sausage apart as it cooks, before draining.

  4. Add the garlic and cook until aromatic, about a minute, before removing from heat.

  5. Add mushrooms and cook until just tender.

  6. Mix the bacon, sausage, pepperoni, olives, and 1/2 of the pizza sauce, and stuff it into the peppers.

  7. Spread the remaining pizza sauce over the bottom of a large baking pan and place the stuffed peppers on top.

  8. Bake, covered in foil, in a preheated 400F oven until the peppers are tender, about 20 minutes, before uncovering, topping with cheese, and baking until the cheese has melted, about 10 minutes.

  9. Plate and garnish with additional cheeses and fresh basil
